Spanakopita: The Ultimate Party Appetizer

Ingredients:

  • 1/2 cup butter, melted
  • 1/2 cup olive oil
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 pound frozen chopped spinach, thawed and drained
  • 1/2 cup finely chopped green onions
  • 1/2 cup crumbled feta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 pound phyllo dough

Instructions:

  1. Preheat your oven to 350°F.
  2. In a large saucepan, heat the butter, olive oil, water, salt, and pepper over medium heat until the butter is melted.
  3. Add the spinach and green onions to the saucepan and cook until the spinach is wilted and the green onions are soft, about 5 minutes.
  4. Remove the saucepan from the heat and stir in the feta and Parmesan cheese. Set aside.
  5. Lay out a sheet of phyllo dough and brush it with the melted butter mixture. Repeat with the remaining sheets of phyllo dough, stacking them on top of each other as you go.
  6. Spread the spinach mixture over the top of the phyllo dough, leaving a 1-inch border around the edges.
  7. Roll up the phyllo dough tightly, starting at one of the long sides.
  8. Brush the top of the Spanakopita with the remaining butter mixture.
  9. Bake the Spanakopita for 30-40 minutes, or until it is golden brown and crispy.
  10. Serve the Spanakopita warm, either sliced into individual servings or as one large roll. Enjoy!
