One of the things I love about avocado sushi rolls is that they are so versatile. You can fill them with whatever ingredients you have on hand, from crab meat to cucumber to tempura shrimp. I decided to keep it simple and stick with just avocado and rice for my first attempt.
To make the sushi rolls, I first prepared the sushi rice. This is a crucial step in making sushi and requires a bit of patience and attention to detail. I followed a recipe I found online, which called for short-grain rice, rice vinegar, sugar, and salt. Once the rice was cooked and seasoned, I let it cool while I prepped the avocado.
I sliced the avocado into thin strips, making sure to remove the pit and skin first. I then laid out a sheet of nori (dried seaweed) on my sushi mat and spread a thin layer of rice over it. I placed the avocado slices on top of the rice and then rolled the sushi up tightly, using the mat to help shape it.
Ingredients:
- 2 cups short-grain sushi rice
- 3 tablespoons rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 sheets of nori
- 2 avocados
Instructions:
- Rinse the sushi rice in water until the water runs clear.
- Add the rice to a pot with 2 cups of water. Bring the water to a boil, then reduce the heat to low and cover the pot with a lid. Cook for 18-20 minutes, or until the water is absorbed and the rice is tender.
- In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over medium heat until the sugar dissolves.
- Once the rice is done cooking, transfer it to a large bowl. Slowly pour the vinegar mixture over the rice, using a spatula to gently fold it in. Let the rice cool for a few minutes.
- Lay one sheet of nori on a sushi mat, shiny side down.
- Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
- Cut the avocado into thin slices and place them on top of the rice.
- Roll the sushi up tightly, using the mat to shape it. Repeat with the remaining ingredients.
- Slice the sushi rolls into bite-sized pieces and serve with soy sauce and wasabi, if desired.
Making avocado sushi rolls at home was surprisingly easy and fun! The end result was delicious and it was a great way to switch up my usual sushi routine. These sushi rolls are perfect for a healthy lunch or dinner option, or even as a party appetizer. They are also a great way to use up avocado before it goes bad.
