I am a huge fan of hummus. Not only is it delicious and versatile, but it's also a great source of protein and healthy fats. However, I often find myself getting bored with the traditional chickpea-based hummus. That's why I was thrilled to discover the amazing world of vegetable-based hummus. And my absolute favorite? Carrot hummus.

This bright orange dip is not only visually stunning, but it also packs a powerful punch of flavor. The sweetness of the carrots is perfectly balanced by the tanginess of the lemon and the earthiness of the cumin. And the best part? It's incredibly easy to make at home. All you need is a food processor and a few simple ingredients.

One of the things I love most about carrot hummus is its versatility. You can enjoy it as a dip with veggies or crackers, spread it on sandwiches or wraps, or even use it as a salad dressing. And because it's made with wholesome ingredients, you can feel good about indulging in it as a snack.

I have to say that Carrot hummus is one of my favourite dips that I have been making for a long time now. It’s a perfect balance of sweet, savory and tangy flavors and the vibrant orange color makes it a perfect dip for any party. It is also very healthy and easy to make.

Ingredients:

  • 2 cups of finely grated carrots
  • 1/2 cup of chickpeas
  • 1/4 cup of tahini
  • 2 cloves of garlic
  • 2 tablespoons of lemon juice
  • 1 teaspoon of cumin powder
  • Salt and pepper to taste
  • 2-3 tablespoons of olive oil
  • Water for consistency

Instructions:

  1. In a food processor, add the grated carrots, chickpeas, tahini, garlic, lemon juice, cumin powder, salt, and pepper.
  2. Pulse the ingredients until they are well combined.
  3. Slowly add in the olive oil while the food processor is running.
  4. If the hummus is too thick, add water 1 tablespoon at a time until you reach the desired consistency.
  5. Taste and adjust seasoning as needed.
  6. Serve with veggies or crackers, or as a spread on sandwiches or wraps.

This dip is perfect for any party, any time of the year. You can make it in advance and store it in an airtight container in the fridge for up to a week.
