I have to say that Carrot hummus is one of my favourite dips that I have been making for a long time now. It’s a perfect balance of sweet, savory and tangy flavors and the vibrant orange color makes it a perfect dip for any party. It is also very healthy and easy to make.
Ingredients:
- 2 cups of finely grated carrots
- 1/2 cup of chickpeas
- 1/4 cup of tahini
- 2 cloves of garlic
- 2 tablespoons of lemon juice
- 1 teaspoon of cumin powder
- Salt and pepper to taste
- 2-3 tablespoons of olive oil
- Water for consistency
Instructions:
- In a food processor, add the grated carrots, chickpeas, tahini, garlic, lemon juice, cumin powder, salt, and pepper.
- Pulse the ingredients until they are well combined.
- Slowly add in the olive oil while the food processor is running.
- If the hummus is too thick, add water 1 tablespoon at a time until you reach the desired consistency.
