Cozy Up with the Perfect Pairing: Spiked Hot Chocolate and Homemade Marshmallows

I am a huge fan of hot chocolate, especially when it's spiked with a little something extra. There's just something about the warm, rich flavor of chocolate combined with a touch of liqueur that makes it the perfect indulgence on a cold winter's day. But as much as I love sipping on a mug of spiked hot chocolate all by myself, it's even better when I'm enjoying it with my family. And what could make that experience even more special? A delicious snack to go along with it, of course!

That's why I am so excited to share with you my recipe for homemade marshmallows, the perfect accompaniment to a mug of spiked hot chocolate. These soft, fluffy treats are so much better than the store-bought kind – they're much fresher, and they have a delightfully gooey texture that just melts in your mouth. Plus, they're surprisingly easy to make at home, even if you're a beginner in the kitchen.

If you're planning a cozy night in with your loved ones, or if you just want to treat yourself to a special drink and snack, this is the perfect recipe for you. So gather your ingredients, find your favorite mug, and let's get started!

Ingredients:

  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 cup water
  • 1/2 cup powdered sugar
  • 1/2 cup cornstarch
  • 2 1/2 tablespoons unflavored gelatin
  • 1/2 cup cold water
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions:

  1. In a medium saucepan, combine the granulated sugar, corn syrup, and 1/4 cup water. Cook over medium heat, stirring occasionally, until the sugar is dissolved.
  2. In a small bowl, whisk together the powdered sugar and cornstarch. Set aside.
  3. In the bowl of a stand mixer fitted with the whisk attachment, combine the gelatin and 1/2 cup cold water. Let sit for 5 minutes to allow the gelatin to soften.
  4. Turn the mixer on low speed, and slowly pour the hot sugar mixture into the bowl with the gelatin. Gradually increase the speed to high, and beat for 12-15 minutes, or until the mixture has tripled in size and is very fluffy.
  5. Add the salt and vanilla extract, and beat for an additional minute.
  6. Using a silicone spatula, scrape the marshmallow mixture into the prepared pan. Smooth the top with the spatula, and dust with the powdered sugar mixture.
  7. Let the marshmallows set for at least 6 hours, or overnight. Once they are firm, use a sharp knife to cut them into squares.
  8. Serve the marshmallows alongside your favorite mug of spiked hot chocolate, and enjoy!
