Step Instructions
1 Preheat the oven to 400 degrees F. Cut the top off of the head of garlic to expose the cloves. Drizzle with a little olive oil and wrap in foil. Roast for 30-40 minutes, or until the cloves are soft and golden brown.
2 Peel and dice the potatoes, then place them in a pot of salted water. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.
3 Drain the potatoes and return them to the pot. Mash the potatoes with the butter and cream until smooth. Squeeze the roasted garlic cloves out of their skins and mash them into the potatoes. Season with salt and pepper to taste.
4 Serve hot and enjoy!
